Light as a feather Mascarpone cake
Ingredients (serves 4)
- 250 g Nonno Nanni Mascarpone
- 300 g flour
- 150 g potato starch
- 300 g sugar
- 100 g butter
- 3 eggs
- 100 ml milk
- 1 sachet baking powder
- grated lemon peel
Method
Beat the eggs with the sugar in a bowl; melt butter over a pan of hot water and add to egg and sugar mixture, then add remaining ingredients: mascarpone, milk, flour, potato starch, grated lemon peel and baking powder. Mix well. Pour into a buttered cake tin and bake at 180° C for 30 minutes.
