Mushroom and Ca' Serena Montellina salad
Ingredients
- 300 g mushrooms
- 1 clove of garlic
- extra virgin olive oil
- juice of one lemon
- salt
- paprika powder
- 100 g Ca' Serena Montellina
Method
Peel and wash the mushrooms, dry them and then cut them into
little pieces. Rub the garlic around the inside walls of a salad bowl and pour
in a drop of oil, the lemon juice, salt and a pinch of paprika. Blend the ingredients
to produce an emulsion and tip in the mushrooms and diced Montellina. Stir gently
to allow the flavours to blend and then serve.
