Frico with potatoes and Bianconanni
Ingredients (serves 4)
- ½ kg potatoes
- 40g butter
- 1 leek
- 150 g Bianconanni
- salt
Method
Peel and boil the potatoes cut into small chunks for about 15
minutes. Drain when they are firm and mash with a potato masher. Heat the butter
and diced Bianconanni cheese in quite a large frying pan and, once the cheese
has melted, add the mashed potato. Season with salt and pepper to taste and cook
the mixture on both sides like you would an omelette.
