Golden Nonno Nanni Ricotta Cake

Ingredients (serves 4)

  • 300 g flour
  • 300 g sugar
  • 200 g Nonno Nanni Ricotta
  • 50 g butter
  • 50 g candied fruit
  • 50 g shelled sweet almonds
  • 2 eggs
  • milk
  • 1 sachet baking powder

Method

Beat the eggs with the sugar then add the Nonno Nanni Ricotta and softened butter at room temperature, and mix together thoroughly. Mix in the flour, a sachet of baking powder and a little cold milk. Next, pour the mixture into a high-sided cake tin that has been greased and floured, and sprinkle the finely chopped candied fruit and almonds on top. Cook the cake in a preheated oven at 180° for about 30 minutes.
