Multi-coloured salad with Bianconanni
Ingredients (serves 4)
- 1 yellow pepper
- 1 cucumber
- 1 spring onion
- 60 g stoned green olives
- 200 g Bianconanni
- 4 firm tomatoes
- 2 tablespoons red wine vinegar
- oil
- salt and pepper to taste.
Method
Beat together oil, vinegar, salt and pepper and leave to settle. Deseed pepper and cut into thin strips; peel cucumber and slice into disks; cut tomato into segments and deseed; slice spring onion and olives into thin rounds. Put ingredients in a salad bowl, dress and add diced Bianconanni.
